Terrell Creek Goat Cheese "Chimney Rock" – Lovingly named after one of our favorite camping spots on Flat Creek, Chimney Rock is a unique Terrell Creek original. Inside its soft, bloomy rind lies a softer and exquisitely tasty treasure. When young, the interior is smooth and velvety and has a clean, creamy, lemon character. As it ages, the interior relaxes inside its blue-grey rind to produce a slightly more fluid consistency coupled with a spectacularly intensified flavor likened to an earthy bleu. Your palate simply has to experience this one-of-a-kind cheese to appreciate it.
Paired with 2019 Gaspard Sauvignon Blanc
This is a Jenny & Francois house blend! Francois found some organically grown grapes in Touraine and did a blend of two parcels of Sauvignon, both fermented in 300 hl tanks. Organically farmed 100% Sauvignon Blanc. Notes of citrus, lemon verbena, lots of classic Touraine minerality. Aromas of lemon drops and lime zest.
